Makes: 1 large tray of fries
Ingredients
4 medium sweet potatoes, peeled and sliced into 1 inch thick long rectangles
500ml - 1 litre Iced water
1 tablespoon olive oil
2 tablespoons cornflour or cornstarch
Aioli Ingredients
1 cup creamy style egg mayonnaise
1 tablespoon freshly squeezed lemon juice
4 medium cloves of garlic, peeled and minced
Healthy pinch of sea salt and cracked black pepper
Water - for your preferred consistency
To Serve
Extra sea salt and cracked black pepper
Method
Place the cut sweet potato into a large bowl filled with the iced water and allow them to soak for 30 minutes.
Remove the sweet potato from the bowl of iced water and dab dry on a large paper towel.
Place the sweet potato into a new large bowl and drizzle with 1 tablespoon olive oil. Toss to coat the potatoes in the olive oil.
Add the cornflour and toss to coat the sweet potatoes in the cornflour.
Place one single layer of the fries into the airfryer basket and air fry on 190 degrees for 5 minutes.
After 5 minutes, turn the fries over carefully and air fry for another 2-5 minutes depending on how you like your sweet potato fries. Transfer the cooked fries to a wire rack to cool. They will crunch up as they cool.
Repeat this process until all of your fries have been cooked.
To make the aioli, simply combine all ingredients in a medium sized bowl with a whisk until creamy. Feel free to thin out the sauce with extra water should you prefer your aioli a little runnier.
Serve the fries with an extra sprinkle of sea salt and cracked black pepper and a bowl of freshly whisked aioli!
The aioli can be stored in the fridge in an airtight container or jar with a lid for up to 3 days.
